2 cups finely chopped pecan nuts or walnuts
2 cups plain flour
1 cup soft butter
1/2 cup sugar
1/4 teaspoon salt, optional
1 teaspoon vanilla essence
1 cup icing sugar
- In a bowl place the finely chopped pecan nuts, plain flour, butter, sugar, salt and vanilla essence. Mix with a fork or hands until blended, then gather into a ball.
- With lightly floured hands pinch off pieces of dough, form into 2.5cm balls and place on baking sheets
- Bake at 160oC for 20 to 30mins, or until browned on base or they feel firm to touch. Let cool for 5 minutes.
- Place the icing sugar in a plastic bag and then shake a few cookies at a time until coated.
